Butter Pecan Streusel Stuffed Apples

So Halloween has come and gone. But its still fall and all. There is still plenty of time to enjoy the seasonal flavors! I had almost forgotten about this little gem that I had made early October, before I went into a Spookie Cookie cooking crazy!! Say that one three times fast! And go!…

We hopped on the ball the first week of October and went apple picking. I was so excited about the whole extravaganza that I had wanted to come up with some sort of healthy, tasty, and easy recipe for the family. Especially now with all of the extra apples that we had laying about the house.

So who doesn’t love a good streusel? This recipe is classically easy and pairs great with ice cream and or whipped cream. I chose to pair and serve mine with Arctic Zero Vanilla Maple ice cream. *If you haven’t tried Arctic Zero I would highly recommend it, especially for those of you who are really tight on the calorie budget. Of course there are many other dieter friendly, health conscious “ice creams” available but this is what I chose, and it was a perfect fit.

Okay, so these apples are warm and crispy, filled with a protein packed oatmeal stresual. The streusal remains somewhat soft and sticky after baking, however some of the oats do get a little crispy. Its amazing and only requires 9 ingredients to make!

8 if you don’t count the apples, because I can promise this streusal is good enough to eat on its own. Or maybe even on top of anything else!! Get creative.

Ingredients: Serves 4
Macros for filled apple
C17 F3 P7 (*Calories may varie depending on the size of your apples)
2 Apples
3 Tbs butter pecan protizyme
1/2 tsp avocado
1/2 tsp coconut oil
1/2 tsp cinnamon
1/4 tsp nutmeg
4 TBS old fashioned oats
2 TBS vanilla almond milk
Lemon slice

1.Begin by pre heating the oven to 350
2.In a small bowl mix together the Butter Pecan Protizyme, spices, and uncooked oats.
3.Next cut in the coconut oil, then the avocado, followed by the almond milk, mix should become tick and sticky
4.Next slice your apple into halfs and remove the stem, crave out a small whole this a spoon or melon scooper to create a pocket in the center of the Apple, this is so the Streusel sits real pretty right where you want it 🙂

5. You can then chop the removed apple centers and fold into the streusel mixture

*Optional Step, rub apple with lemon juice to help prevent browning
Once you have spooned the filling into each apple (about 1tbs)
6.Pop in the oven for 25-30 minutes

Pair with your favorite ice cream and drizzle with Maple Walnut Walden Farms syrup and or extra protizyme icing!
