Creepy and Crawly Protein Peanut Butter Cookies

Boo! Did I scare you!? No? Okay, but how about these cookies though, creepy right? A little? No, yah I suppose that they are more cute than anything.
Boo!…. Nothing? Okay fine, let’s get into it.

These delicious little critters are once again made with love and protein. After a few fails on perfecting the perfect protein peanut butter cookie, I think I hit the “spider” on the head! Get it! I never give up on a recipe! Never!

But don’t let your EYES deceive you. These cookies are super easy to make, low calorie, crunchy and moist and frighteningly cute. Perfect for as party favor or just a quick treat. Guilt free, unless you feel bad about eating something so cute. You monster, you.

Alright, in the bowl we’ve got…

Ingredients
½ Cup Peanut butter
1 Scoop Protizyme Peanut Butter Cookie Protein
½ Cup Truvia Baking Blend
1 egg
1 tsp vanilla

On the cookie..

Toppings
30g Ghirardelli 60% Dark Cocoa Chips
5g Paraffin Wax
Mini Reeses Cups
Sugar Free Strawberry Jam
*Candy eyes

*All  calculations have been taken without the eyeball candies, decorative purposes only!

Instructions
(pre freeze some Mini Reese’s cups for best decorating result)
In a large bowl combine peanut butter, protein powder, egg, Truvia Baking Blend and vanilla.
Mix until all ingredients are combined
Pre heat oven to 350 degrees
Roll dough into golf ball sized balls and place on a well-greased pan
Gently press cookies down to slightly flatten
Cook in oven for 8-10 minutes

 

To Spookify (Decorate) the Cookie…

 

Decorations Optional*
Spikers:
Once cookies come out of the oven, un-wrap and gently push frozen Reese’s cup into the center of the warm cookie
In a small zip lock bag, melt chocolate chips and paraffin wax for 30 seconds in the microwave
Carefully cut a pencil tip sized hole at one edge of the bag to create an opening for the chocolate to drizzle out of
After cookie has fully cooled, drizzle hardening chocolate in X patterns to create the eight spider legs
*Add candy eyes
Creepy Eye:
Once cookies come out of the oven, gently press the center of the cookie down with a round ended butter knife, or anything you have handy to create a dip in the middle of cookie.
Place about 1TBS Sugar Free Strawberry Smuckers Jam in center of cookie.
